Ingredients:

- 1 cinnamon stick
- 3 cloves
- 1 small onion, finely chopped
- 2 green chilies, slit

- In a pot, heat ghee or oil over medium heat.
- Add cumin seeds, bay leaf, cardamom pods, cinnamon stick, and cloves. Fry for a few seconds until the cumin seeds start to sizzle.
- Add chopped onions and green chilies. Fry until the onions turn translucent.
- Add the soaked rice and fry for 2-3 minutes until the rice turns opaque.
- Add 2 cups of water and salt to taste. Stir well and bring to a boil.
- Once the water starts boiling, reduce the heat to low and cover the pot with a lid.
- Cook for 15-20 minutes until the rice is fully cooked and all the water has been absorbed.
- Turn off the heat and let the rice sit for 5 minutes.
- Fluff the rice with a fork and garnish with coriander leaves.
